Globe artichoke is a perennial edible, architectural plant growing to 120cm. The very large grey-green leaves form a mound in the first year and from then on, spiny buds appear which can be cooked and eaten. If the buds are left to flower, they open to large bright violet flowers from July to October, which are loved by pollinators. The seedheads that follow are attractive to finches.
